paleo rustico pizza

There is nothing more important on any restrictive diet than making sure all your temptations and comfort food are accounted for somehow. Trust me, you’re going to eat these things anyway, so you might as well do it LEGALLY. I guarantee you can do this is the 45 minutes it takes to call and wait for Domino’s IMG_7336

1) Find an excellent crust recipe. I like a mix of coconut and almond flour and I always roll it VERY VERY THIN so it will be crispy and not spongey. Here are some crust links: GastroChef ‘s Cauli/Almond Flour crust, AAG almond/coconut flour crust, PaleoLeap’s easy crust.

2) Use aged Cheeses (mixture of mature cheddar and Parmigiano-Reggiano here) which barely contain any lactose.

3) Make your own tomato sauce OR buy one of these organic, sugar-free, legal ones at your local Whole Foods or health food store. Muir Glen, Organicville, or Trader Joe’s Tomato Paste

4) Choose your most be loved, decadent toppings. Because this is a treat! I chose uncured prosciutto parma (no sugar), a mixture of kalamata and green olives, artichoke hearts, sautéed mushrooms and vidalia onions, and lots of oregano and basil. Trust me,  though it’s no Pizzaioulo, which I frequented during my year in Florence, this was more satisfying than any Papa John’s run.

Bon Appetit!
